Purple Aloo Paratha

Purple potatoes are so attractive that every time I see them at the farmer's market, I just buy them :) Snehanshu loves to make purple potato chips. They turn blue in color and are deliciously crisp.

Recently someone just enlightened me on the benefits of consuming purple potatoes. Truely speaking, I had no idea about it. But, here is the link to Health benefits of Purple Potatoes. So if you haven't tried purple potatoes yet, check out all the recipes I have, and I am sure you will be tempted to cook something soon.

Tonight was an easy and quick dinner. Something that I make often. Aloo Paratha: flatbread stuffed with spiced potatoes served with yogurt and onions. Check out my Aloo Paratha Recipe by clicking on this link: http://shitals-kitchen.blogspot.com/2013/02/aloo-paratha-flat-bread-stuffed-with.html Instead of using regular potatoes, I used purple potatoes to add some color :)

This recipe will make 10-12 medium parathas

Boil 4 large purple potatoes. Peel and mash them. Add salt to taste, lime juice, ginger and green chilli paste, 1 tbsp. cumin seeds and handful of chopped cilantro. Mix well.

Click here for the step by step recipe to make Paratha Dough: http://shitals-kitchen.blogspot.com/2013/02/basic-paratha-dough.html

To make the dough:
3 cups of wheat flour can make 10-12 parathas. Take flour in a wide mixing bowl.
Add 3 tsps. of salt and 3 tbsps. of oil.
Add 1/2 cup water and start mixing the flour quickly.
Add another 1/2 cup and continue till the dough binds.
Around 1 1/2 cup of water is needed to form a soft malleable dough. At first the dough may look and feel sticky. That's okay!
Add few drops or 1/8 tsp. of oil and knead the dough well.
The dough turns non-sticky and soft. Cover and let the dough rest for at least 10 minutes before rolling it into a paratha.
Divide the dough and potato stuffing into 10-12 equal parts.
Dip each dough ball into dry flour and roll it to 6 inch diameter circle.
Add an ice-cream scoop full of potato filling.
Gather the sides to form a pull string bag.
Press the dough and filling to flatten it.
Dip in dry flour again and start rolling it lightly.
Roll it gently to form 8-9 inch diameter circle.

Gently put the paratha on hot griddle.
Flip in a minute and brush some oil or ghee on it.
Flip and fry for a minute, and brush some oil or ghee on the second side too.
Fry on both sides and serve hot.

Parathas served with chilled plain yogurt and a dollop of butter.

Enjoy!!

Chinese Dosa

After the final FIFA football match over the weekend, we had planned a dosa party dinner :) With few of my old, tradition stuffing and some new ones too, we just enjoyed dosas. On the streets of Mumbai, dosa vendors make fresh, delicious dosas right before you with the choice of stuffing or filling you like. This same street food style can be created at home too. Just keep variety of chopped veggies and filling ready, and your guest can enjoy different types of dosas.

Here are few pictures from our earlier Dosa parties at home.

Chutnies

Chinese dosa!! What a fusion! Delicious crunchy veggies, noodles, and sauce wrapped in a regular dosa. Just like Mumbai street food style :)

Finely chopped or julienne carrots, bell pepper, spring onions, and cabbage.
Some boiled noodles.

My delicious recipe of Schezwan Sauce for chinese noodles:

Veggies and Stuffing ready to assemble dosas.

Here is my Dosa batter recipe to make deliciously crisp dosas:

Spread dosa batter on a hot griddle. Sprinkle few drops of oil or butter on it.

As dosa starts to cook, add few veggies and noodles. Add a tsp of schezwan sauce. Mix well. Fold in the dosa and serve with delicious chutnies.

You could avoid noodles and make some spring dosa with fresh crunchy veggies.

Spread dosa batter on hot griddle. Spread a tsp. of schewan sauce and a tsp. of tomato ketchup over the doas. Add veggies and pinch of salt. mix well. Roll, cut into pieces and serve with chutnies. It is so easy!
