Pancakes for Fasts

Festivals, but time for Hindus to fast too! I know it may sound strange, fasting with food! Yes, in fact, when hindus fast, we are just prohibited from having certain grains or vegetable group. And every family too has their own way and thoughts of practicing fasts. Most people know of Sago pearls or what we call as Sabudana which are permitted and all the cooking revolves around it. Yes, it is Snehanshu's favorite too, but due to its high glycemic index I just like to avoid or reduce sabudana and go with healthier options like Rajgira or Amaranth seeds and Kutu or buckwheat.

These soft pancakes or dosas or chillas or pudlas, mean the same thing is different languages and cultures. By using some healthier flour options I am not restricting this delicious dish only to fasts.
In this recipe I have used a ready flour mix (gluten free) specially for fasts, but i do make these pancakes only with buckwheat flour or a mix of buckwheat or amaranth flour.

Grate 1 raw potato. This is optional but I like the texture of raw grated potato in the pancake.
You could add purple potato for color or sweet potato or yum too.

Add chopped green chillies, minced ginger, chopper cilantro, salt and mix well.

Add a cup of flour mix. Add water to make a pancake consistency batter.

On a nonstick griddle pour a spoonful of batter and spread it around. You can adjust the thickness of this pancake.

Pour few drops of oil around to shallow fry or just spray some oil.

Flip and cook on both sides.

Serve with Peanut Chutney!
