Wishing everyone A Very happy Diwali and A Prosperous New Year!
To bake cookies for Diwali has been on my to-do list since a long time. Since we were invited over for Diwali lunch with my relatives, I wanted to take these colorful and bright cookies to make the celebration even more special.
To bake cookies for Diwali has been on my to-do list since a long time. Since we were invited over for Diwali lunch with my relatives, I wanted to take these colorful and bright cookies to make the celebration even more special.
My challenge for this day was preparing cookies and icing without the use of any egg :) Wilton cookie glaze and icing is readily available. But, I wanted to create my own eggless colorful icing that could dry hard over cookies. Last week, I did experiment with eggless cookie dough recipe. Since I had my cookie cutters ready, I was good to go.
Roll the dough to 1/4 inch thickness.
Use cookie cutters of your choice. Gently place each cookie on a baking tray and bake at 350 F for 10 minutes.
While the cookies were set aside to cool well, I was set to prepare the glaze.
Confectionery sugar, milk, vanilla extract, and food color of your choice.
Mix a tbsp. of milk to form a thick pouring glaze to pipe on the outline of the cookie. Add vanilla extract and food color, same as the base color of the cookie.
Fill the piping bag or ziplock bag.
Always start by piping the outline of the cookie with a thick glaze and then filing the cookie with a thin glaze of same color or different color.
Believe me, this was so easy and fun. Let the cookie sit for 10 minutes for the icing to harden. If the icing spreads, add more sugar to thicken it.
To fill the cookie thin the icing by adding 1 tbsp. milk.
Spread thin icing/glaze over the cookie with a cookie painting brush or a spoon.
Let the cookie rest and the glaze set before decorating it.
I used red and golden yellow to decorate and make my Diwali bright.
Here are some edible sugar pearls I used.
