Eggless Tres Leches Cup Cake

Valentine's day is incomplete without making your valentine's favorite cake. And, my valentine loves this melt is your mouth Tres Leches! If you remember, I made Tres Leches for Snehanshu last year on his birthday. Here is the link: Tres Leches Cake. This time I wanted to try it with my eggless cake recipe for my friends and family in India.

Prepare an Eggless Cake Batter.
  • Start with a stick of softened butter. (8tbsp. or 113 gm)
  • Whisk till the color changes the the butter becomes light and fluffier.
  • Add 1 can condensed milk. Whisk well. Whisking incorporates air to give a light cake.
  • Add 1/3 cup of slightly warm milk. Whisk well.
  • Add 1 tsp. vanilla extract.
  • In a separate bowl: Sift 1 cup flour, 1 tsp. baking powder, 1 tsp. baking soda. 
  • Mix the dry ingredients to wet mixture and fold in slowly.
  • Fold till you obstain a lumpfree flowing batter.
  • Use a greased cake pan or cup. pour the batter in and bake in a 350F preheated oven of 20-25 minutes.
  • Poke a toothpick in the center of the cake, If it come our clean, cake is done.
  • Enjoy it as is or make tres leches with it.

I found these cute oven proof baking cups which can be easily pealed off if needed.

I poured 1 1/2 times of ice-cream scoop.


Bake these cups in 350F preheated oven for 15-20 minutes.

OMG, It doubled in size! I should have added less batter in each of these cups.

Test if it is done by piercing a toothpick. If it comes out clean, your cake is done. Let the cake cool well on wire rack.




Prick some holes in for the cake to soak liquid well.



Tres Leches: Mix condensed milk, evaporated milk and half and half in the ratio of 1:1:2.

Pour around 4-5 tbsp of milk mixture in each of the cups. Let the cake soak it up well. 





Refrigerate the cake over night or for 4-5 hours.


Since the cake has risen more than my expectation, I cut the top to level it and make place of whipped cream topping.


Whip 1/4 cup whipping cream and 2 tbsp. of powdered sugar till you obtain a soft peak consistency. 






Top  with whipped cream and spread it evenly.



Slice fresh strawberry for the topping.


Beautiful heart shaped slices.



Chill in the refrigerator and serve.
