Healthy Vegetable Sandwich

After all the festivals, celebrations and eating delicious sweets and snacks, it is time for some low calorie healthy dinner! Only soups and salads are not the most preferred dinner in my family. Rather, meal with lots of veggies suits us the most and veggie sandwich is one of them!

Vegetable sandwich is another staple of Mumbaikars (people of Mumbai). It it one of my favorite Mumbai street food too :)

I use healthy wheat bread or nine grain bread to increase the fiber content.  :)

4 slices of sandwich bread (of your choice)
Butter (optional)
Green Chutney
1 Boiled potatoes
1 tomatoes
1 cucumber
2 slices of onions (optional)
Bell pepper.
Sandwich masala (spice powder) or salt and pepper.

Spread some butter and green chutney on each of the bread slice.

Evenly place slices cucumbers. I slice the cucumbers one at a time while placing them on the bread slice. This would avoid dirtying extra dishes and would prevent cucumber from loosing their water content and freshness.

Sprinkle some seasoning like chat masala or sandwich masala evenly. 
You could also sprinkle only salt and pepper powder.

Thinly slice boiled potatoes and place them evenly over the cucumber. Sprinkle seasoning again.

Thinly slice tomatoes and place them one at a time over the potatoes. Season tomatoes well.
Add sliced onions, sliced bell pepper, sliced boiled beetroot over tomatoes.

Cover the veggies with another slice of buttered and chutneyed bread.
Use a sandwich knife to cut the bread into bite size pieces. (either square or diagonal)
Use you palm to hold the sandwich in place while you cut it. Do not press the sandwich!!
(This reminds me of sandwich stalls in Mumbai)

Yummy sandwich filled with loads of veggies :)
Serve with fresh green chutney and tomato ketchup.
