Mumbai Potato Frankie

This is making me nostalgic! Veg Frankie was a new fast food when I was in school more than 25 years ago. Waikiki frankie stalls were the only ones that carried these wraps stuffed with a patty tasting delicious, tangy with a crunch of chopped onions. Really simple and delicious! There were only 2 varieties available at that time Veg and Non-Veg. Nowadays, you get Frankie rolls/wraps in variety of flavors, with chutneys and toppings. Of course people want change but what I needed was my childhood memories!

Check the recipe of  Healthy Veggie Frankie (click here). Now I made a simple potato patty to stuff in wheat flour crepes just as I used to make while I was in Mumbai :) Usually Mumbai frankie is prepared with all purpose flour and is super delicious, but I make it with whole wheat flour. Organic whole wheat flour + veggies = healthy and delicious. I am sure kids as well as moms would be happy with such easy, delicious, and healthy recipe for lunch or dinner. Girls party or a game night or a picnic or a play date, this recipe is perfect for all occasions.

Ingredients:(Makes 8-10 Frankie rolls)
For wrap:
2 cups whole wheat flour
1 tsp. chilli powder
1 tsp. salt
1/2 tsp. baking soda

For potato patty
5 large potatoes (boiled and mashed)
1+1/2 tsp. salt
1/2 cup chopped onions
1-2 tbsp. chilli garlic sauce
1/4 cup semolina or bread crumbs

To assemble:
1 cup finely chopped onions
Chaat masala
  • Take regular wheat flour and whisk in 3-4 cups of water to form a pancake like lump free thick pouring batter. Water depends on the type of flour you use. All purpose flour will take less water compared to a whole wheat flour.
  • Add 1 tsp. salt, 1 tsp. red chilli powder and 1/2  tsp. soda-bi-carb. Mix and let the batter rest for 5 minutes.
  • Pour spoonful of batter on hot griddle to make thick crepes. Apply a bit of oil and fry them both sides. Do not completely cook them. You will complete the cooking process again later. Make as many crepes you can with the batter (around 8-10). Stack them and keep them aside.
  • Boil 5 potatoes, mash them, add chopped onions and salt.
  • To give a tangy, vinegary sour taste add chilli sauce.
  • Use some semolina/rava or breadcrumbs as binder.
  • Mix well and taste for flavors. Add spice or lemon juice if needed.
  • Make into long patty. Coat in semolina or breadcrumbs and fry on hot griddle. Use a bit of oil while frying on either sides.
To assemble:
  • While serving: heat pre-made crepes/pancakes on a griddle till it turns slightly brown. Do not let it turn crisp.
  • Put few cooked patties. add chopped onions and the main ingredient: chaat masala (tangy spice powder)
  • Roll the crepe tightly.
  • Usually frankie is inserted in a long plastic or paper bag to prevent the filling from falling off. You could wrap in parchment paper folding the bottom to prevent the filling from falling off.
  • Serve immediately. If you have crepes and patties ready, rolling frankie is quick and easy.
  • Wrap in parchment paper and then in aluminum foil to take for picnics or long trips/drives.

Cake Pop 4

Cake Pops: So much fun to make and I am enjoying them!! New design, and better technique. It is true, practice makes man perfect! It is okay to make mistakes but, it is fun to learn from your mistakes too.

These pretty colorful pops were made for our friends with colorful personality! Cherag and Parinaaz with their 2 beautiful kids moved to a new place and we were invited over for dinner. What perfect gift would I have taken for a chocolate lover! So I planned to make chocolate pops with chocolate frosting and chocolate candy. Triple chocolate yum!
Here is the link to:

Baked chocolate cake.

Once the cake cools, crumble it in a large bowl.

Add 1 cup of chocolate frosting and mix well to form a soft dough.

You should be able to make small balls.
Add more frosting if the dough feels dry and cracky.

Make smooth round balls and set it aside in a tray lined with parchment paper.

Melt chocolate candy in a microwave for 30-45 seconds.
Dip a lollipop stick in melted chocolate and slowly and gently insert in a cake ball.
As the chocolate candy hardens, it glue the lollipop stick to the cake ball.

Refrigerate for 2 hours.

Melt chocolate candy or any flavor you like.
Gently dip chocolate ball in it.
Let excess chocolate drip and let it dry.

I like to use a large foam box to poke the lollipop sticks and for chocolate candy to dry.

For colorful designs: put few candy chips in a ziplock bad and microwave for 30 seconds.
Press with your fingers to melt them.
Snap the corner for candy to flow out.

Let the candy flow while you make patterns of your choice.

Let the pops dry well.

I used this round bowl to decorate them.

Wrap few foam pieces in a tissue or crinkled tissue of your choice.

Start arranging the pops around the bowl.

Wrap in a plastic sheet or basket bag.
And you are ready for the party!

These will surely be a party winner!
