Vegetable Upma

Weekend breakfast in our house is always something different from regular milk, cereal, and bread. My husband enjoys Poha sprinkled with crisp sev noodles, but I realized that there was no poha at home today. A quick vegetable upma was a savior. Although Upma is not my husband's favorite breakfast, he surely liked this one and said it was 'different' :)

Upma is an Indian version of Polenta which is cooked with semolina/rava. It is a South Indian breakfast specialty which is enjoyed with chutney.

This Upma is definitely different from traditional one. But, it surely was quick delicious and nutritious.

To serve 2:

Heat 2 tsp. oil in a pan. Add 1 tbsp. Urad dal/ white lentil, 1-2 red chillies, 1 tsp. rai/mustard seeds.



Add 1/2 small chopped onion, 1 small potato chopped, few peas, and chopped carrots.


Add pinch of turmeric.

Add 1/4 cup yogurt and 2 cups water. 


Add salt to taste. Cover and let the water boil and veggies cook.

Meanwhile in a clean dry pan, dry roast 1/2 cup semolina/rava for 5-7 minutes.


When veggies get tender, add a spoonful at a time of roasted semolina to boiling water while stirring to avoid lumps. Keep on low heat, and be careful of mixture splashing as it thickens.



Mix 1/2 tsp. pure ghee for flavor (optional)

Garnish with chopped cilantro and sev noodle, and serve immediately.

Enjoy delicious Veggie Upma!!
