We all know of pakodas or fritters that are dipped in chickpea flour batter and deep fried. Yes, similar to tempura but, the one I made today are dipped in Amaranth flour or Rajgira as we call it. You got it correct, this is an absolutely wonderful recipe to be enjoyed during Hindu fasts. This was such a quick snack with just few ingredients I had at home.
I bought these delicate, cute, peppers yesterday to make Snehanshu's favorite, baked stuff peppers. So just thought of creating some different recipe with few of them today :) Instead of colourful sweet peppers, you could use regular green peppers, Anaheim peppers, Serrano peppers,or any of your choice.

To stuff 12 small peppers:
Wash and clean peppers. Cut into half keeping the stem in tact.
Use 1 large boiled potato. Yes, I use blue/purple potato to stuff peppers. You could use regular potato too.
Mix 1 cup amaranth flour/rajgira flour, 1 tsp. salt, pinch of turmeric and 1 tsp chilli powder with 1/2 to 3/4 cup of water to make batter. Keep it aside.
Mash boiled potato. Add salt, lime juice and chopped chillies for spice. You could also add few cashews and raisins for texture and taste. Use grated paneer or cheese for more flavor.
Stuff this filling into each of these peppers.

Dip into prepared batter and deep fry till golden brown.
With some extra potato mixture, I made some quick wadas. Rolled the mixture into balls, dipped into rajgira batter and deep fried till golden brown :)
