Roasted Vegetable Au Gratin

Remember the day when I made Cake Pops for Anusha and I said I made Gratin for our surprise potluck. Now it's time to put up the pictures and the recipe!

Here is a picture of table full of yummy food. I feel a surprise potluck is difficult than the one that is decided and discussed. Each of us made an entire meal by itself without knowing what others would do. Even the excitement level was high!

Gratin is a cheesy baked dish with either one veggie or assorted vegetables. While we were back in India, Italian food and restaurant were our favorite. I used to make Gratin and pasta a lot. It was almost after 5 years that I planned to make something other than Indian food! Snehanshu was really excited about this menu!

Start with veggies of your choice. Mushrooms too would taste delicious!


I like to cut the broccoli and cauliflower florets and cube veggies and lay in the baking dish so that they are enough and not less for the space in the dish. 
(Bought this new shallow baking dish specially for this dish)

Microwave in hot water for 5 minutes and shock them by immersing them in cold water. It maintains its shape and color.

Roasting veggies in oven, Lay them on the baking tray, put a little butter over the veggies. Srpinkle some salt. Roast for 10-15 minutes at 400F preheated oven. I broil the veggies too for a great color and texture. 
I like the veggies to have a bite and cooked perfectly but not be overcooked and broken apart.


Toss the broiled veggies in your Gratin baking dish.


Add fresh chopped Mozzarella Cheese :)

To make the sauce: melt 4 tbsp. butter in a saucepan.



Fry 3 tbsp. all purpose flour/ maida till it changes color.


Gradually add 3 cups of milk while continuously mixing. Add salt and pepper.


Let the white sauce thicken. Add Mozzarella and Parmesan cheese.


Pour white cheesy sauce over the veggies.


Add red pepper flakes. (optional)


Cover with bread crumbs (I used Panko, Japanese bread crumbs) and Parmesan cheese.


Bake in 350F preheated oven for 20 minutes and broil if needed. The top is crisp with hot bubbling cheese and bread crumbs.


Serve with warm garlic bread sticks.
