Berry Popsicle


Summer is the time when kids and adults, everyone wants to indulge in delicious, chilled and refreshing drinks, and popsicles. With my experiment of creating delicious juice concentrates/syrup free from artificial color, flavor and preservatives, I was successful with another yummy and tangy concentrate made of grapes and blackberries. I was trying to make a kalakhatta syrup, a sweet and tangy syrup usually made from black jamuns and one of my favorite. Although the color wasn't black like kalakhatta, taste was just perfect!

Now I will be making ice gola or shaved ice using the same syrup soon. Yeeeeee......

Make these homemade fruit concentrate and stop worrying about how much artificial color and flavor your kids/family consumes. Use fresh seasonal fruits and enjoy chilled sharbat or popsicle any time of the day!

I used a bunch of blackberries and red grapes. Pureed them well.






Boil 1 cup sugar with 1/2 cup water. Simmer for 5 minutes.

Add 3 cups of fruit puree. Simmer the mixture well.


Dry roast 1 tsp cumin seeds (Jeera) and 1 tsp carrom seeds (Ajwain)
Both these spices are great for digestion and would add great flavor to the syrup.

Grind dry spices when cooled. 


Add powdered spices to simmering puree.

Add 1/4 cup lime juice and salt.

Add Rock salt too to give tangy flavor.


Let the mixture cool. Strain and preserve in an airtight container in a refrigerator.

Pour over pancakes, bread, crepes.
OR
Make chilled sharbat by adding 2 tbsp of concentrate to a cup of chilled water. Mix well and enjoy.
OR
Fill tangy sharbat in popsicle containers. Freeze them and enjoy!




I love this popsicle maker. The melted popsicle collects in the well and can be easily sipped :) 
Less messy and fun!
