Cabbage Capsicum Open Toast

This is one of Shu's favorite open breakfast sandwich. It reminds him of his childhood days! Cabbage and capsicum are not the veggies liked by kids. But, when they are flavored with ketchup and spread over crisp toast and to top it all Cheese, it turns into a gourmet open veggie sandwich :)


Use a cookie cutter and select a shape for kids birthday party, cocktail party or kitty party.

Ingredients to make 6 open sandiwiches
6 bread slices
Butter
1 large onion sliced
1 large bell pepper sliced (capsicum)
2 cups shredded cabbage
Shredded cheese
3-4 tbsp. tomato ketchup
Salt to taste
Pepper powder to taste

  • To prepare toast: Butter sandwich bread (of your choice) and toast in the oven at 350 F till it turn golden brown.
  • In a tbsp of butter, saute sliced onions and bell pepper till they turn soft.
  • Add shredded cabbage, salt, and pepper powder. Cook till cabbage turns soft.
  • Turn off the heat, add 3-4 tbsp. of tomato ketchup and mix well.
  • Allow the mixture to cool slightly or else it will soften your toast.
  • On toasted bread slices, spread 1-2 tbsp. of cabbage mixture evenly.
  • Grate some cheese over the sandwich.
  • Broil at 450 F oven till cheese melts and gets crisp.
  • Cut diagonally and serve with some cheese and ketchup

 Here is step-by-step pictorial recipe:

Shu likes to add a drop of ketchup on either side of the triangle so that he could taste a drop in every bite. This means he finishes this piece in just three bites :)
