Ingredients:
5-6 potatoes (grated)
½ cup corn kernels
¼ cup finely chopped bell pepper (red and green)
½ cup peas
¼ cup cashews + raisins
2 tbsp grated coconut
½ tsp cumin seeds
½ tsp pepper powder
½ tsp turmeric
½ tsp red chilli powder
2 lemons
¼ cup chopped cilantro
1 tbsp butter
Grated cheese for garnish
8-10 cashews for garnish
1 tsp oil
Salt to taste
Oil for shallow frying
Peel, wash and
grate the potatoes. Add salt, turmeric, chilli powder, and 1 lemon juice
and mix well. Divide the mixture into two parts: One part to make cups
and another to make saucers. Add half of the finely chopped cilantro in
the saucer mixture.
For the cup:
Add few drops of oil in each well of an appam pan and heat for few
seconds. Add the potato mixture on the sides of each well to form a cup
shape. Let it shallow fry on medium heat until brown and crisp.
For the saucers:
make small pancakes on a griddle with the grated potato mixture. Add
few drops of oil on all sides and shallow fry till it turns golden brown
and crisp. Flip it on the other side and allow it to cook. Remove and
keep aside.
Cups and saucers are ready.
Filling 1: Corn and bell pepper
Heat
butter in a pan. Add chopped bell peppers and stir fry for 2 mins. Add
corn kernels, salt and black pepper. Mix well cook for 2-3 mins. Set the
mixture aside and let it cool.
Filling 2: Peas and coconut
Heat some oil in a pan. Add cumin seeds, cashews and raisins and fry for a min. Add boiled peas. Cook till the mixture is well blended. Remove from heat and add coconut. Mix well. Add salt, lemon juice and cilantro. Mix well and set aside.

To assemble:
Place each cup on a saucer. Fill the cups with desired filling. Garnish the corn and bell pepper cups with grated cheese.
Garnish the peas and coconut cups with cashews.
