At school, we sowed some vegetable seeds in biodegradable containers made of coconut husk. Students were allowed to pick the seed of their choice to sow and it was nice to see how kids pick the seeds based on their favorite vegetable or based on what their parents cook at home. It was a great day and one of my favorite topics to teach, Plants!
But, after this tiring day I felt like making a healthy wholesome dinner without spending much time in the kitchen!
It was my food processor that did most of the work for me. Chopping, mixing, kneading!
Paratha is a flat bread cooked on griddle, served with yogurt, sliced onions and lemon pickle.

Paratha is a flat bread cooked on griddle, served with yogurt, sliced onions and lemon pickle.
Here are some veggies I used to mix in with the dough.
I love my food processor. Toss in roughly chopped veggies and chop them.
Change from chopping to kneading blade.
Seasoning time:
Mix in with the veggies and let the veggies sweat out some water.
Add 2 cups regular wheat flour.
Add 1 tbsp. oil.
Put the lid on and pulse till the flour and veggies combine.
Put the lids on and turn on to start making the dough.
Gently pour water through the opening till it form a soft dough.
Remove in a greased bowl and let it rest for 5-8 minutes.
Sprinkle some dry flour on rolling board or mat.
Start rolling the dough. Pick the rolled bread/paratha to avoid sticking and sprinkle more dry flour if needed.
Heat the griddle. Drop the rolled paratha. Cook on each side and brush some oil or ghee and fry well on either sides.
Serve with sliced onions, yogurt, pickle and papad.
It was so quick to make and a good start of the week!
