A quick, rustic meal with roughly chopped veggie and thick tandoori roti is our favorite and reminds us of dhaba (road side) food.
Here is step-by-step pictorial recipe:
Ingredients:
1 medium cauliflower head
1 medium sized potato
4 tbsp. oil
1 tsp. fennel seeds
1 tsp. coriander seeds
1 tsp. fennel seeds
1 tsp. coriander seeds
1 tsp. cumin seeds
3/4 tsp. mustard seeds
2-3 dry red chilies
1 tsp. turmeric powder
1 tsp. red chili powder
1 tbsp. coriander powder
1 tbsp. garam masala powder
Salt to taste
Juice of 1 lime
Cilantro for garnishing
- Separate Cauliflower florets and peal and cut 1 large potato into wedges.
- Heat 4 tbsp. oil. Add coriander seeds, fennel seeds, cumin seeds and mustard seeds. When they start cracking...
- Add 1 tsp. turmeric powder and dry red chilies. Fry for 30 seconds.
- Add cauliflower florets and large potato cubes
- Add salt, toss veggies well, cover and cook for 6-8 minutes or till almost done. Do not over cook the veggies.
- Add red chili powder, 1 tbsp. coriander powder, 1 tbsp. garam masala powder. Toss the spices well.
- Cover and cook for 4-5 minutes.
- Squeeze some fresh lime and sprinkle freshly chopped cilantro.

Serve with fresh rotis/chapatis. I made fresh roti on griddle made of clay to give fresh tandoori flavor.
