Poha/ Flattened Rice

Snehanshu looks forward to the weekend...any guesses why?? Because he loves poha!! The first thing he would say as soon as I wake up is 'Poha Day' :) Love you hubby!!

Another popular breakfast in India! Poha are flattened rice flakes and each state or even each family has their own version of making it. Some people add in more veggies to make it nutritious, some add nuts! Serve with Masala Chai Tea and enjoy!


Thick Poha or flattened rice flakes.

Take 2 cups poha. Sprinkle 3/4 cup water little at a time and toss poha well till they are all coated with water. You want to make them soft but not mushy. Do not add all the water at the same time. Depending on type of poha you use you might need little more or less water than 3/4 cup.

Cover and let them rest for 10-15 minutes. Roll your fingers in the bowl so that they do not stick and form lumps.

Cube a potato and a medium sized onion.

Chopped green chilli. Adjust the spice as per your taste.

Heat 2 tbsp. oil. Add 1/2 tbsp mustard seeds, chopped green chillies, pinch of asoefotida.
Fry peanuts (optional)


Add potatoes and onions, salt and 1 tsp turmeric. Cover and cook till potatoes are tender.
Add other veggies like carrots, peas, green beans.



To soak poha: Add 1 tsp. turmeric, salt, 2 tsp. sugar and freshly squeezed lime juice.


Add poha to cooked potatoes. Mix well. Cover and let it steam on low heat for 4-5 minutes.
Sprinkle water if needed.



Add lemon juice for fresh taste.


Sprinkle freshly chopped cilantro.

Garnish with crisp sev/ chickpea flour noodles and cilantro.
