Crispy Fried Veggie Balls

With Christmas and New Year party just around the corner, here is a quick vegetarian appetizer for everyone. An easy to eat, bite size balls will be favorite of all!

Ingredients:
2 cups minced veggies (onions, bell pepper, carrots, green beans, cabbage)
1 tbsp. minced ginger
1 tbsp. minced garlic
1 cup all-purpose flour
1/4 cup rice flour
1 cup plain cornflakes
1 tsp. salt
1 tsp. pepper
  • 2 cups of finely chopped/ minced veggies like onions, bell pepper, carrot, green beans, cabbage, ginger and garlic. You could always adjust the amount of veggies you would like to use.
  • Add salt and pepper powder and let the veggies rest and sweat for 10-15 minutes.
  • Add 1 cup all purpose flour/maida and 1/4 cup of rice flour to bind the veggies and make a soft dough.
  • In a ziplock bag take a cup of plain cornflakes and roughly roll the cornflakes with the rolling pin.
  • Make small veggie ball and roll them in crushed cornflakes.
  • Heat oil and deep fry on medium heat till they get golden brown.
  • Drain on a paper towel.
  • Serve with delicious schezwan sauce.
Here is step-by-step pictorial recipe:

I use my Cuisinart hand blender that has chopper attachment (another very important tool in my kitchen) to mince veggies. It takes no time to roughly chop veggies and drop them in the chopper. 

I am all for quick cooking :)

Crispy fried veggie balls are ready to serve.
Goes well with spicy Schezwan sauce, chilly sauce or ketchup.

After a long time I had opportunity to make these cute appetizers again. Yes, we had a Potluck Picnic at the Park with friends. The theme for this potluck was finger foods, and as the name suggests we were not allowed to make food that would need spoons :) It was super fun. Creative dishes served in style!! 

Few months back I came across these cute sunglasses that I thought would be cute for summer parties. I was so correct. These picks looked so cute and became super popular amongst kids.
