Garlic Noodles

I found these long, squiggly, macaroni cum spaghetti in an Italian aisle and thought of making garlic flavored noodles with it, which is one of my favorite pasta dishes at Cheesecake Factory :)

This is a dry pasta dish, without any sauce. The flavors of garlic and veggies is what makes this dish delicious!

Use regular spaghetti or macaroni or pasta of your choice.

Drop them in seasoned boiling water and cook till they are Al Dente (cooked till they have a bite to it, not completely cooked.)


Meanwhile prepare garlic oil. Mince 3-4 cloves of garlic. Add 2 tbsp. Extra Virgin Olive Oil. 
Ha Ha reminds me of Rachel Ray as she says EVOO :)


I love my pasta boat. It boils pasta in a microwave and the lid is a wonderful strainer.


Mix the garlic oil in hot pasta. Cover and set it aside for 5 minutes.


Use veggies of your choice. I like mushrooms and asparagus too depending on whats available in my refrigerator.

Heat 1 tbsp. EVOO. Fry some minced garlic. Saute onions till they start caramelizing.


Saute Veggies.

Season veggies with very little salt. These veggies are so flavorful and the flavors blend in perfectly. In Indian cooking we usually add spices and herbs, and the flavor of just veggies is not noticed. It is really fun to try veggies by themselves and to appreciate their color and flavor. 
Add broccoli, mushroom, asparagus and have fun!

Add garlic pasta, pepper (optional), dried Oregano (optional), chilli flakes (optional).

Toss pasta well with veggies.

Snehanshu will never eat pasta without garlic bread. Use the bread you like. Sometimes I even use regular sandwich bread or whole wheat bread to make it healthier.


Mix 2 cloves of minced garlic in 2 tbsp. regular butter.


Apply on they bread and bake at 450 F oven or broil till it turns golden brown.

Try this on a hot griddle or grill.


I tried this with colorful pasta too!
