Sandwich Uttapam

Such a cute finding! Bread shaped silicon egg ring to cook eggs and serve easily with bread. As you all know me, I picked it up thinking I would make my veggie omelet with chickpea flour and veggies and it would be perfect to serve with a slice of bread or toast, just how my hubby darling likes it. Click for Veggie Omelet :)

But, I tried something new. Sandwich Uttapam. HOW FUN! Uttapam is a thick pancake made of rice and lentil (totally gluten free). Adding veggies in between two layers of batter, creates a surprise element. This will surely be enjoyed by kids and would be great for kids school lunch too!

So start by making and fermenting uttapam batter. Click here for Uttapam Batter :) It is the same as my idli and dosa batter.

Chop or slice veggies of your choice. Be creative. Your family will love what you make :)

Use a nonstick skillet or griddle. Heat it on low flame. Place the ring and pour spoonful of batter to form a thin layer for uttapam.

Add veggies of your choice and even grated cheese.

Pour another spoonful to cover the veggies. Cover with a large lid and let the steam cook the batter.

Slightly lift the ring. Remove the ring when the batter is not runny.

Gently flip the uttapam and let it cook on medium flame.

Serve with cilantro chutney, tomato ketchup, coconut chutney or tomato chutney.

You do not have to use a ring. Just make a regular uttapam shape :)

A twist to regular Uttapam!
Let your Family guess the ingredients :)
