Penne Pasta with Roasted Bell Pepper and Sun Dried Tomatoes


On busy weekdays you need a delicious dish, easy and fast to cook. And, one of my favorite is simple pasta with veggies. Although it has no sauce or herb seasoning, the taste of veggies that fuse with olive oil and pasta is amazing. It is true, you eat with your eyes first! More than the taste, it is the color and plating that will attract your family to the food :)

Pasta dishes are actually easy to make. you just need to plan, multitask and concentrate for 15-20 minutes and you are done with quick and delicious meal.
 
I like to start boiling water for pasta first. I have a big stainless steal basket in water to easily strain cooked pasta. As the water boils, season it with enough salt.

Drop pasta in boiling water and let them cook. 
It will take around 7-10 minutes while you saute veggies.

Heat a pan. Add olive oil, chopped onions and garlic. Saute them.


Add sundried tomatoes, chopped bell pepper and roasted red bell peppers.


Saute for 3-4 minutes till pasta is cooked.

I do not over cook the pasta. They should have a bite since they will continue cooking with veggies. Strain and add pasta immediately to sauteed veggies and toss them well. 
Adding pasta to veggies while it is hot and cooking will absorb flavors well.






Serve pasta over the bed of baby spinach.

Serve with bread and olive oil and roasted garlic flowers.
