Quick Vegetable Pulav

The fragrance of freshly cooked basmati rice spreads throughout my house and welcomes happy diners! Oh yes, Basamati Rice, the best whole grain, aromatic rice specially for vegetable pulav, biryani, jeera rice or even simple steamed rice with curries!

This easy to make rice pulav with vegetables is colorful to look at as well as deliciously tasting. I make this often for a take-to-office lunch for my husband with a bowl of fresh yogurt.

Beans, carrots and frozen peas.
I do not boil them first. I let the saute and cook to avoid them from overcooking and loosing their nutritional value.

Cook 1 cup good quality whole grain Basmati rice with 1 3/4 cup water in microwave for 8-10 minutes.
I like them fluffy, but not overcooked and mushy.

When done, add some salt and use a fork to fluff them. Do not mix them a lot. Set it aside.

Heat 1 tbsp ghee/clarified butter.

Use whole garam masala/spices for flavors.

Fry spices and cashews in hot ghee.


Saute beans for a minute.

Saute carrots for a minute.

Add peas and salt. Mix, cover and let the veggies cook for 5-7 minutes.

Do not over cook them.

Add fluffed rice and mix well with veggies.


Cover and let the rice absorb all flavors.


Serve with yogurt and or your favorite curry!!
