Veggie Chow Mein

Since childhood, noodles have been my favorite. Plain noodles with ketchup, stir fried noodles, cup noodles, maggie noodles, and much more. Adding lot of veggies makes it nutritious and filling.

Kids always enjoy pasta and noodles. While I was in India, I made these for my niece and nephew and I just can not forget how much they enjoyed these noodles. My adding tons of veggies I satisfied both, their mom as well as the kids :)

Hope you noticed my new WOK!! Yeeeepeeee...fun to cook in.

Heat a tbsp. of oil.

Saute chopped garlic and onions.

Saute bell pepper, carrots and beans.



Add a pinch of salt. Cover and cook for 3-4 minutes. Do not over cook and make the veggies mushy.


Add boiled noodles, shredded cabbage and spring greens. 



Add some vinegar and toss the noodles well with veggies.

Serve with freshly prepared Schezwan sauce, chilli sauce and soya sauce.
