Puff pastry is so versatile! Especially when you have sudden guests at home, a pack of puff pastry dough in your freezer can save your life :) Add the filling of your choice, bake and you will be the best hostess ever! Have you seen my other recipes with puff pastry dough?
For the potato filling: Boil potatoes.
Thaw frozen puff pastry dough in the refrigerator or outside depending on when you would like to use them. These are small square doughs.
Caramelized onions: yumminess in a dish!
Slice onions. Heat 2 tbsp. oil in a pan. saute onions, add a pinch of salt and let them cook till they turn brown.
For the potato filling: Boil potatoes.
In a tbsp. oil add chopped green chillies and cumin seeds. Add boiled, chopped potatoes, peas, salt and turmeric. Mix well. Remove in a separate container and cool.

This time I made small rectangular puffs rather than triangle, which I do always.
Divide the dough into two parts.
Add a bit of caramelized onions and potato filling. Fold the dough. press all sides well with a fork.
Get all the little pillows ready.
Place these pillows on a baking sheet.
You could brush some egg over it, but I will brush some milk for shine.
Bake at 375 F for 15-20 minutes till they turn golden brown.
