Enjoying each day of celebration and festivity! Day 5 of Ganesh Utsav. The entier day I was thinking of prasad/sweet I could make to offer him. My mom used to make this smooth, sweet dessert with cottage cheese, I had sweet Sondesh in my mind. I knew if was easy to make and would be quick after an entire day at work.
Sondesh is a Bengali (western part of India) sweet specialty. It is made by whisking Indian cottage cheese with sugar till it turns light and fluffy. It is then rolled into balls and garnished with almonds and pistachios.
So here is an added twist to a regular sondesh. A quick bite size Indian sweet with western touch, great for parties. It was so much fun to make these cute sandwiched, pipping sondesh into the strawberry :)

Here is how I made these cute bite size desserts.
Boil 4 cups of milk. Add few drops of lemon juice till the milk curdles and whey separates from solid.
Strain curdled milk. Wash it lightly and let the water drain well. Allow it to cool.
Remove in a bowl and knead well till it turns soft.
Add 4-5 tbsp powdered sugar and 1/4 tsp vanilla extract. Knead well again till it forms a soft dough.
Wash and pat dry fresh, ripe strawberries.
Slit into half keeping its stem intact .
Use a pipping bag with a thick nozzle. Or just use a zip lock bag to pipe it.
Add some soft sondesh mixture to the bag.
Start to pipe it.
Slit into half and pipe some Sondesh on one side. Place another over it and pierce with a toothpick.
How cute is that!
Drizzle some chocolate over it or strawberry jam or dip into melted chocolate and let it set well.
Dust with some powdered sugar and chill.
